Apple Cake

Ingredients:
CAKE--
2 c. sugar
1 c. shortening
2 eggs
4 c. grated apples
2 1/2 c. flour
2 t. cinnamon
2 t. baking soda
1 t. salt

TOPPING--
1/2 c. brown sugar
1 1/2 t. cinnamon
1 c. chopped nuts

Directions:
1. Preheat oven to 350. Grease and flour a 9-by-13" baking dish.
2. Cream sugar and shortening. Add eggs and beat until fluffy. Sift together dry ingredients and add to creamed mixture along with grated apples. Pour into prepared pan. Combine the topping and sprinkle over the top of cake. Bake for 35 minutes or until center is firm.

  1. I would say 55 min to bake, and pears make a lovely substitute. Delicious.
