Ingredients:
1 1/2 c. flour
1 t. baking soda
1/4 t. salt
1/2 c. butter
2 eggs, beaten
1 c. brown sugar
4 overripe bananas, mashed
1 t. vanilla
1 t. cinnamon
Directions:
1. Preheat oven to 350* F. Lightly grease a loaf pan.
2. In large bowl combine flour, baking soda, salt, and cinnamon. In separate smaller bowl, cream together butter and brown sugar. Stir in eggs, mashed bananas, and vanilla. Stir banana mixture into flour mixture. Stir just to moisten. Pour batter into prepared loaf pan.
3. Bake in preheated oven for 55 to 60 minutes, or until toothpick inserted into center of loaf comes out clean. Let bread cool in pan for 10 minutes, then turn onto wire rack.
