Pasta e Fagioli

Ingredients:
1 lb. ground beef
1 small onion, diced
1 large carrot, shredded
3 stalk celery, chopped
2 cloves garlic, minced
2 (14 oz.) cans stewed diced tomatoes
1 (15 oz.) can red kidney beans (with liquid)
1 (15 oz.) can white beans (with liquid)
1 (15 oz.) can tomato sauce
1 (12 oz.) can V8 juice
1 T. white vinegar
1 t. oregano
1 t. basil
1/2 t. thyme
1/4 t. pepper
1/2 lb. ditali (short tube) pasta, cooked al dente

Directions:
1. Brown ground beef over medium heat; drain off fat. Add onion, carrot, celery, and garlic; saute
    10 minutes. Add remaining ingredients, except pasta. Simmer at least 1 hour.
2. Five to ten minutes before serving stir in pasta and simmer. Top with Parmesan cheese if desired.
